How are the data templates defined, as some data fields aren't relevant to my product?

The data fields available for each product are based upon the category which is entered when setting up the product.
For example, if you select a Grocery category for the product then you will be able to enter the nutritional information for the product, but if you select a Haircare category then no nutritional information will be required.
If you have accidentally selected the wrong category when setting the product up, then the product can be discarded and you will be able to start again.
